Pancakes

Shrove Tuesday brings the opportunity to try out different pancake recipes and toppings, from quite dense griddle pancakes to classic crepes!

Here is our current favourite recipe.


100g white spelt flour

Pinch of salt

1 free range egg

300ml milk (or goats or Soya milk)

A little butter

Add the pinch of salt to the flour in large mixing bowl. Use a simple hand whisk to mix in the beaten egg until fully incorporated. Then pour in a little of the milk at a time and whisk until you have a smooth batter.

Use a large non-stick frying pan, add the butter and melt over medium heat. Then add a small ladle full of the pancake mixture and swirl until just covers base of pan. When the mixture solidifies and bubbles can be seen on the surface, flip over to brown on other side. Then slide onto a plate and smother with topping of choice.

Favourite toppings – lemon juice and (fruit) sugar is a classic of course! Also good is runny honey, agave syrup, fresh blueberries, St Dalfour raspberry jam, Sweet Freedom syrup or Nutella. Yum!
